I haven't seen Joe in about 9 years and his dad in about 12 but these guys are a ton of fun. Joe can cook and work harder than most people I know and it was a pleasure to cook for him finally.
Beet Poached Scallop with Coriander Chile and vinegar.
And Lamb Sweetbreads and Neck with Cocoa Spatzle, Curry Granola and Lion stout Foam.

Thanks for all your help and we will miss your Ass. We have lost one of our core team members here at The Red Hen, Mikey has been part of our team since very early on in the life of the restaurant and did many things above the call of duty if you've been to the restaurant you undoubtedly know he built the stone planter out front made most of our cutting boards and our little utility cart in the kitchen and oh yeah he cooked there too. Good Luck back in C-Ville and don't be a stranger. We will meet again.
